I am painting a prefabbed piggy bank for a friend's new baby with acrylic paint. How do I restore the shine to the bank after I'm finished?

You could try glazing it and placing it in a kiln as traditional potters do. But unless you are confident it won't implode, I'd advise against that.
If you are concerned about the piggy bank breaking under high temperatures, try a product that will be less taxing on the prefab ceramics, like a spray-on clear gloss that won't require any heating to set.
Prior to spraying, I'd suggest placing a small piece of foam in the coin slot to prevent any webbing occurring across the gap.
